Chocolate chocolate everywhere!

I am a chocaholic. And I'm turning my husband into one too.
(cue evil cackle!)

Probably the best cookie recipe I've ever made.
Recipe to follow! Don't get mad! I'm going to post it!

Our, yes, OUR, as in Mark AND my new favorite store bought ice cream.

THE brownies. Per Mark's request. 
Sorry I can't give you this recipe; I'm sworn to secrecy.
But this batch wasn't my best. Living in a drier climate means the modifications I made while living in Myrtle Beach don't work quite as well. Still yummy, but not my best.
Wah. Wah.

Ok! So now for the chocolate chip cookie recipe:

Ingredients
  • *1.5 cup (2.5 sticks) butter, softened (I also did 2 sticks of butter and 0.5 cup applesauce since I didn't have another 1/2 stick and it worked fine)
  • *1.5 cup dark brown sugar
  • *0.5 cup granulated sugar
  • *2 large eggs
  • *4 teaspoon vanilla extract
  • *4 1/3 cup all-purpose flour
  • *2 tablespoon cornstarch
  • *2 teaspoon baking soda
  • *1 teaspoon salt
  • *1 bag mini semi-sweet chocolate chips (or you can do 1/2 mini choc chips and 1/2 mini m&ms!)
Instructions
  1. Mix butter and sugars until light and fluffy.
  2. Add egg and vanilla and mix until well combined.
  3. Combine flour, cornstarch, baking soda, and salt and mix together.
  4. Mix dry ingredients slowly into wet ingredients and blend well.
  5. If the dough is crumbly, stir in water 1 teaspoon at a time until it just holds together. The dough should not be sticky.
  6. Add in chocolate chips and stir until evenly distributed.
  7. Ok, now you have two choices. CHOICE ONE: Using ¼ cup measure, scoop out dough and form into a ball. Continue until all dough is balled. Approx 24 cookies. CHOICE TWO: Using a large cookie scoop, scoop dough, form into a ball and flatten a little. This makes approx 48 cookies. 
  8. Place dough in the fridge for 2 hours, or in the freezer for 2 hours or up to 3 months.
  9. Place chilled or frozen cookie onto parchment lined baking sheet and bake at 350 degrees F for 15 min.
  10. Let cool 2 minutes.
  11. Stuff your face and enjoy the deliciousness.

I LOOOOVE BLUE BELL ICE CREAM SO DANG MUCH!!!!!! Why oh why don't they sell it anywhere I live.... They have it in Hilton Head, but nowhere else I live. Bummer for me. Lucky for you that you found it! Every single flavor is the best you have ever had. Oh man it is good. And, it turns out, I have made that cookie recipe. YUM!!!!!! Love it too. So...when are you moving near me so we can bake together and eat all kinds of yummy chocolateness? And open a bakery? ;-)
