Chocolate chocolate everywhere!

I am a chocaholic. And I'm turning my husband into one too.
(cue evil cackle!)

Probably the best cookie recipe I've ever made.
Recipe to follow! Don't get mad! I'm going to post it!

Our, yes, OUR, as in Mark AND my new favorite store bought ice cream.
Dude just read the description. AH-mazing. 

THE brownies. Per Mark's request. 
Sorry I can't give you this recipe; I'm sworn to secrecy.
But this batch wasn't my best. Living in a drier climate means the modifications I made while living in Myrtle Beach don't work quite as well. Still yummy, but not my best.
Wah. Wah.

Ok! So now for the chocolate chip cookie recipe:
(Adopted from The Pinning Mama)
Ingredients
  • *1.5 cup (2.5 sticks) butter, softened (I also did 2 sticks of butter and 0.5 cup applesauce since I didn't have another 1/2 stick and it worked fine)
  • *1.5 cup dark brown sugar
  • *0.5 cup granulated sugar
  • *2 large eggs
  • *4 teaspoon vanilla extract
  • *4 1/3 cup all-purpose flour
  • *2 tablespoon cornstarch
  • *2 teaspoon baking soda
  • *1 teaspoon salt
  • *1 bag mini semi-sweet chocolate chips (or you can do 1/2 mini choc chips and 1/2 mini m&ms!)
Instructions
  1. Mix butter and sugars until light and fluffy.
  2. Add egg and vanilla and mix until well combined.
  3. Combine flour, cornstarch, baking soda, and salt and mix together.
  4. Mix dry ingredients slowly into wet ingredients and blend well.
  5. If the dough is crumbly, stir in water 1 teaspoon at a time until it just holds together. The dough should not be sticky.
  6. Add in chocolate chips and stir until evenly distributed.
  7. Ok, now you have two choices. CHOICE ONE: Using ¼ cup measure, scoop out dough and form into a ball. Continue until all dough is balled. Approx 24 cookies. CHOICE TWO: Using a large cookie scoop, scoop dough, form into a ball and flatten a little. This makes approx 48 cookies. 
  8. Place dough in the fridge for 2 hours, or in the freezer for 2 hours or up to 3 months.
  9. Place chilled or frozen cookie onto parchment lined baking sheet and bake at 350 degrees F for 15 min.
  10. Let cool 2 minutes.
  11. Stuff your face and enjoy the deliciousness.

Guess Who This Is?

I have a confession. Usually when I get a call from an unknown number, my curiosity meter goes off the charts and I have to answer because I have to know who it is. I'm so intrigued! Today I had a call from a Maryland number...huh? I almost ignored it but then remembered my pal Amy is home in Delaware and maybe she was calling from a cell number or something....I don't know but I thought I had better answer it. BOY am I EVER so glad that I did! It was my brother, who is currently out serving a mission for the Church of Jesus Christ of Latter-day Saints. Communication is pretty strict/limited so the missionaries can focus on their mission; they are only allowed to call their family twice a year, Mother's Day and Christmas. Well, I answered this Maryland number and recognized instantly that it was Dane but I was so confused. Why was he calling me? Well, I guess it sometimes pays to have your parents out of the country so I got the privilege of being the one he called. YEEEEEEEEEEEEEEEEEEEEEEEEEEEEEEEEEEEEEEEEEEEEEES! And let me tell you, actually I can't. I can't tell you. But I can sure try to convey how much I adore my brother. He's a stud. I adore him to bits and pieces. LOVE him. He's my twin, 6 years my junior and one of my very best friends. We got to Skype for over an hour while I tried to email and text my mom, stepdad and brother who are currently in London. Fortunately I finally got in touch with them so he did get to chat with them too.

Now. Let's backtrack a little. Last weekend was gloomy, crummy, and rainy. To be honest I kind of liked it because I was really tired and liked having the excuse to stay in. So what do I do when I am home bound?? I bake!!!!

I tried out a new pretzel recipe! DELISH! 
Rosemary sea salt pretzels. I will definitely be making these again! 
(Erinn and Stephanie, if you are reading this, these take substantially less time than the pretzels we made...but that was a blast and totally worth it!)

I decided to try out macaroons for the first time. 
Clearly I'm a rookie but they tasted really good.

Last Saturday night I went over to Amy's apartment with the goal to rearrange her living room. Bonus! I had Jimmy John's subs for the first time. It was good but let me tell you, it didn't have a thing on KHOP (Kingston House of Pizza). After about 30 minutes of moving her furniture all over the room, we finally got it right. We are VERY pleased with it! And another bonus!!! I learned how to use the panorama on my iPhone! 

Then on Sunday I decided to make homemade nutter butters. Holy catscans these are good. If you like peanut butter, these are for you. This isn't a very good picture so don't judge too harshly; I had already wrapped the good ones up and didn't feel like getting them out. 

Wednesday I went to dinner with a friend to a local burger joint that is supposed to be really good in honor of National Burger Month. It was SO good. I got the Surf 'n Turf which had spicy shrimp on it. You better believe I ate all 7oz. But don't worry, I practically starved myself the entire day to prepare for this. Well worth it friends, well worth it. 

Yesterday I booked our (that is, Scotty and I) flight how to New England in June. Scotty is moving back home to live with my brother and sister-in-law. You know what that means? Practicing in the dreaded carry-on bag. Poor Scotty. I hate it just as much as he does. 

I popped into the grocery store yesterday on the way home from work because I saw they had a sale on strawberries so, naturally, had to have some! They were beautiful!!! And tasted wicked good, which I was delighted by because the last bunch I bought were not so great. I got 3 pounds, probably ate at least half of a pound while I chopped these up to freeze. I plan on making banana strawberry ice cream with...bananas and strawberries. Seriously. That's all. Amy showed me because she made banana/peanut butter ice cream in her food processor and it was to die for. Thank you Pinterest.

Yay it's May!

So. 
Let's recap. 
This may be a long post BUT it has lots of pictures (and yes, a lot of food pics. Don't pretend to be shocked)!!! That means it'll mostly be pictures with my commentary. Muahaha!

Ye have been warned. Birthdays are kind of A HUGE deal for me. The bigger I can make it, the better. My pal Amy had her 24th birthday on the 23rd and the day before I had brilliant ideas poppin' out of my brain cells. I couldn't wait. These are the results:

*Eh hem* FIRST of all friends, let me just say I made my own caramel...WITHOUT a candy thermometer. WHABAM! And it was great! The author of the recipe said I could do it and she was right. Boy I felt like a million bucks. Also I'm glad because otherwise I would have had to make a late night trip to Wally-world (eh...) for caramels to melt (aka the cheapo way). Well, thank goodness it worked. 


 I felt it completely necessary that I "taste test" some so I put it atop some leftover brownies I had in the freezer and then thought, "what the heck?" and topped it with some sea salt and whipped cream, or "keem" as my darling nieces used to call it. Delish friends, DEE.LISH.

Now the point of making the caramel? Well, Amy's favorite candy bar, or one of, is Twix and I had pinned (I will admit, I am a Pinterestaholic. Yup. *no shame*) a homemade Twix recipe months ago and now had a reason to make them! YES! So I made 'em, cut up in attempt to make them kinda, sorta look like Twix bars and then got all crazy (this is what happens when I am scheming, the ideas just FLOOOOOW. It's amazing) and decided to wrap them up so they looked like candies. 

AND THEN. I decided that Twix bars weren't enough, because, like I said, I like to go ALL OUT on birthdays. I decided to make some peanut butter pudding cookies. Amy and I had made these together months ago and I remember us both devouring them so I thought these would be a hit. Instead of peanut butter chips, which I didn't have because I kind of decided to make them on the fly, I just used Reeses Pieces, peanut butter M&Ms, and chocolate chips. 

SOOOO YUMMY! And you know I taste tested that dough about 5 times. I gave her 24 cookies and she was kind enough to share. Mmmmm! 

THEN. And this was the AHA! moment I had right before I left work on Monday and decided to gather all my goods to super surprise Amy on Tuesday: decorate her desk/half of our office. Oh I was bursting with excitement! I got to work super early and decorated and was so nervous she would come in extra early (she always beats me) and I would be in the middle of decorating. Well, as it turns out she was running late and ended up getting in loooong after I had finished. Thank goodness. She was surprised and I was pleased. 



Now we decided to throw a birthday bash on Saturday and I got all crazy and made spinach dip (from a packet but it was from Mark from this fabulous store in Texas!) with homemade pita chips, and, now this is a big deal, guacamole. For the first time. By myself (which means without the guidance of Mark, who showed me how to make it). Now I realize it's not rocket science but I'm a baker, ok? This means I like specific amounts with specific ingredients and clear cut instructions. Cooking is a little more lenient in amounts and ingredients so I was a little nervous making this for the first time, and for a party no less. Fortunately, Mark is amazing and walked me through about 5 times. He even Skyped with me while I made a test batch. Yes he is that awesome. And yes I am pathetic. It's the curse of perfectionism. 

THEN. In my attempts to get back into making dinners more consistently that are a little more wholesome than a PB/honey sandwich, cereal, or a Greek yogurt, I found a super easy salad recipe which involved black beans, corn, romaine lettuce, cherry tomatoes, and a homemade cilantro-lime dressing. Friends, it's off the hook good. I added some spicy tilapia and whoa buddy it was good. YAY for leftovers! 

This shouldn't be anything new but I just am not feeling running as of late. I don't know why. Actually I do. April, well, after April 10th, April and I were not on good terms. No siree. Work sucked the life out of me (you work 3 weeks straight sans a day off and tell me how you feel. Yeah that's what I thought), I was recently asked to be the director of a girls camp my church does every year and usually the director is given this assignment months ago and I have kind of been thrown into the whirlwind of planning (with a mere 2 months to go until camp) while trying to get myself up to speed, plan, etc. etc. etc., while trying to maintain my personal sanity. This is no small task. I believe many of you would say, "Welcome to being an adult" or "Welcome to reality. Yeah well...fine. At least hand me some more cheese for my whining. Provolone preferably. Or sharp Havarti. 
I was talking to Amy, who is running a marathon this weekend and another in Philadelphia in November. I was telling her I didn't really want to run the Myrtle Beach mini-marathon (half marathon; I don't know why they call it a mini-marathon because there is nothing mini about 13.1 miles thankyouverymuch) in October. I didn't like the course and, I donno, just wasn't feeling it. Amy suggested I run the half marathon in Philly when she runs the full. 
DONE. I am slightly more motivated though probably not until after the chaos of June is over. But still. Now I have a goal. AND it's my first distance race. We're making a little trip out of it and driving up with a group of friends, a few others who are running the half and a few coming to cheer us on. I am pumped! And you better believe I will be running up the Rocky stairs! 

Next month this cutie will be back in NH to live with my brother and sister-in-law permanently. I'm a little heartbroken because I love him so, but I think it'll be better for him: more room to run around and two people to care for him. So I busted out his dreaded carry-on bag to get him ready for the flight home. I can already feel my stress level rising. 

Per the request of Amy, I made rolo cookies for her because this week has been a bust for us both. Like I'd turn down a request for cookies and the opportunity to bake. NEVER! 

And now for today. I had yesterday and today off. Yesterday was devoted to errands and today was my fun day. I let my mane go free--and it was windy so I looked like a human Mufasa--and busted out my mint cords and loafers, and you know that means I'm in for some serious fun. 
The fun started with Iron Man 3. Dude. First showing of the day cost me a whoppin' $4.75. That pleased me GREATLY. And hooooooly catscans it was a GREAT flick. Robert Downey Jr. is one of, if not my favorite actor. This role was made for him. Go see it. You will not be disappointed! Then I went to get froyo for lunch. It's been awhile since I had some. I got hazelnut, chocolate, and vanilla froyo and topped it with--ready for this??--chocolate chips, brownie bits, chocolate-covered pomegranate seeds, cocoa puffs (why not??) and topped it off with chocolate jimmies (or for those of you not from New England, chocolate sprinkles). Ooooooh yes I loved it! AND this makes me SO excited to go home in June to a) see Heath and Emma and my New England family and b) go to Lagos, the best ice cream place EVER. I'm drooling already. OHMYLANTUSIMSOEXCITED!!!!!!!!!!!!!!

Then I decided to "pop in" to Anthropologie. Right. Pop in. Ha. I don't shop at Anthro for their clothes. Not quite my style, though cute. I shop for their kitchen stuff, sometimes home stuff, and random books/literature/note pads/writing stuff. I honed in on this cup and plate (pictured left) when I walked and I ended up walking up with that plate because I have an obsession with nautical stuff and therefore I had to have it. I also loved these little ceramic sailboats (pictured right), but what would I really do with them? Eh. Not worth $24. But still cute.

And my eyes popped out of my head a little when I saw these AH-dorable sticky notes. And hello! There were 480 in there! But I told myself I have enough stationary/sticky notes (For now. But that's a lie. It was a tactic to talk myself out of them and it worked...this time). 

 Then I got home and the top I had ordered for my new bathing suit had arrived!!! My new suit is ready! Now, woman to woman--or hey if you're a man, woman to man but let's face it, what I am about to tell you is probably more exciting and understood by a woman--I had to order a smaller size in my bathing suit bottom. Yeah. I almost died with happiness. You know that feeling right? Oh yes. AMAZING. 

Now. May I please just tell you how much I adore my brothers. I can't even tell you. There are no words except to say I am the luckiest sister ever. I love and adore and admire these fine men. They are some of the best friends I will ever have. 

Heath (on the left) graduated from Brigham Young University the end of April in Electrical Engineering (WAHOO!!!!!), was accepted to the University of New Hampshire's law program, and got a scholarship. I am SO freakin' proud. And I get to see him and his fabulous wife in a month. We're going to have some serious sibling time. I CANNOT wait. 

Dane (on the right) is rockin' and rollin' as a missionary for our church--The Church of Jesus Christ of Latter-day Saints. He is doing very well and I am SO proud of him. You can read about his experiences and adventures here.  

Finally, OneRepublic came out with a new album in March and friends, it is AAAMAZING. I LOVE IT. Michael Buble also came out with a new album in April, but, to be honest, I like OneRepublic's better, at least right now. And I found a really cool recipe for homemade rosemary soft pretzels. I think I'll give 'em a try tonight. And I thumbed through a macaroon recipe book at Barnes and Noble today (and used my iPhone to snap some of the recipes; does that make me a bad person? I did't want the whole book!), and I think I might try to make some macaroons tonight, or tomorrow. Hmm...baking and listening to OneRepublic? Yup that sounds like a swell evening to me!

13.1...done!

So what were you doing at 7:30am this morning? 
Sleeping? Getting ready for church? Reading the newspaper? Eating breakfast?

Well.

I was running my FIRST HALF-MARATHON.
And thus begins the tale of my half-marathon experience...

It all started one Saturday afternoon....no I'm just kidding. I was up at 5:05am this morning. Except I didn't sleep well last night because whenever I have to get up for something that is outside of my normal routine, I wake up every couple of hours. Today was the same. I woke up at 1am, then 2:30am, then 4am, then 4:58am and finally my alarm went off. I was nervous because the day had finally arrived. The hour to rise and run had arrived. I drug myself out of bed, took Scotty for a quick walk, came back, ate a peanut butter and jelly sandwich, drank some water, sipped a little Gatorade, and then Amy called to tell me she was on her way. She told me she would drive me in case parking was a problem so I wouldn't have to stress out. She's awesome. So I quickly got dressed: compression shorts, running shorts, tank top, cheap long-sleeved t-shirt to throw away, running shoes. Grabbed my iPod, watch, bag and off we went. 
6am and ready to roll!

Now mind you, at 6am it was in the low 50s, and still dark, and I wasn't wearing a whole lot. Plus I had to pee for the 5th time that morning. Plus this was my first race. Plus there were A LOT of people in legit running get-up and I was freezing and worried I hadn't worn enough layers, though I had been told and had read that you should dress in what you would wear if it were 10 degrees warmer then the current temp so, I did. And I was nervous. I stood in line for the lovely port-a-potties, which took forever, and finally got in line 15 minutes before race time. Once I got into the pack I felt about 10 degrees warmer and that was nice and a little comforting. I lined up with the 9-10min/milers and at precisely 7am we were off. I was trying to pinpoint someone to pace with and so at first I decided on "Pink Shorts" and "D. Smith" but they were going a little too slow for me so I would jump from runner to runner. At mile 2 I saw the 1st place runner FLY by. Holy catscans. I wish I were that fast. I wonder what it's like to be the fastest runner of ~4,000 people. Anyway. 
Now Amy said she would be at mile 4.5 and mile 12 with some sweet posters for me. At mile 4.5 I spotted Amy before she saw me and I was staring her down and I nearly ran right up to her before she recognized me. It was hilarious!! She threw down her first poster and opened the other one and started running and cheering with me. The other spectators, and myself, got a GREAT laugh out of it. I should also mention I was about 10 seconds in front of the 9 min/mile pacer at this point and even though I felt fine at this pace at that point in the race, I knew it was a little too fast and I wouldn't sustain it the entire time. Confidence and competitiveness got the best of me and I paid for it around mile 8 because I was starting to feel the race wearing me down. Yikes. By mile 10 I was probably running closer to a 9:45 pace and I really, really, REALLY wanted to walk a bit but again, the competitive side of me dominated and I kept going. The last 2 miles were the absolute worst, physically and mentally. When I did my 11 miler, miles 10 and 11 were hard so I knew these last two miles were going to be a challenge. At this point my feet hurt, ankles hurt, knees hurt, hips hurt, quads were aching, I was SO SICK of music, my lungs hurt, and I was convinced I hated running with a passion. Then I saw Amy and a huge group of spectators right before the mile 12 maker and that gave me a nice boost of adrenaline and energy. Amy had the best posters ever. A nice chuckle and a nice boost! When I hit the mile 12 marker I told myself I was going to give it my all the last mile.

Yeah that didn't happen.

My quads would have none of it so basically I just told myself to sustain my current pace and to keep putting one foot in front of the other. The last mile was the hardest because instead of a straight shot to the finish, they made us take this path up the boardwalk that snakes so it slows you down and throws off your pace and I couldn't see the finish line. CRUEL. At this point I was so ready to be done. SOOOOO SOOOOOO ready! I saw some of my other friends who had finished before cheer me on and that really helped. I saw a big group at the 13 mile marker and then turned the last corner of the snake and FINALLY saw the finish line and SPRINTED as fast as my poor legs could go. Then I stopped and OH MY LANTUS my quads were killing me. Well, my whole body was aching but my quads and knees probably hurt the most. They handed me the sweet medal, I downed a bottle of water, a banana, a bagel, and limped off to find my group.

And when I got home. SWEET medal! 

All in all, it was a FABULOUS experience. My goal was to finish between 2 hours and 2 hours and 10 minutes (roughly a 9:30min/mile--10min/mile pace). WELL, I shocked myself and finished at a 9:10min/mile pace! YAAAAAAAH BUDDY!!!!!!! Despite the aches and pains, it was totally worth it and I am so glad I did it. I'm doing my next half marathon in February and aiming for a new PR and hoping to get down to an 8:50-8:55min/mile pace. Let the training begin...but not until next week. I'm taking a week off to recover-wahoo! And I'm retiring my Nike shoes and preparing to purchase some legit running sneakers. Amy is going to come with my to get fit for the proper running shoes. I'm hoping they size me into Brooks! My Nikes are near and dear to my heart because I started getting into running last summer and they were the sneakers that this all began in and that I ran my half in.  Awwwww. Presh I know!!

So post race I took Scotty for a long walk, mostly for him to stretch his legs and because it was such a beautiful day today, but also to loosen up my legs a bit. Scotty had no sympathy for my soreness though, and tried to run several times. Yeah that didn't go over well and he was getting irritated with me. Sorry dude. I spent a few hours on the couch watching one of my favorite flicks, "Sabrina" (the Harrison Ford one....ooooooh yah!) and being really lazy. I haven't had a day like that in a very long time and it was really nice. I was going to go for a double feature movie presentation but before I knew it the Pats-Jets game was on. I almost had a heart attack when we blew our lead and then had to go into overtime. No worries, THEY WON! (Thank goodness because BYU lost to Notre Dame yesterday and boy oh boy am I getting slack for that tomorrow at work. Dr. W will not be pleased that we lost to the Irish....oooh boy.). All I have to saw is our scouts better find a new QB or Bronco and Riley have got a lot of work to do in the off season. Then I made pumpkin chocolate chip cookies (forgot to take pictures...sorry!). Then I gave Scotty a bath and further ticked him off. He does not like baths but he needed one. He's so fresh and clean now!

Then I talked to my mom who is FINALLY back from Europe. Thank the freakin' stars. 

Oh and I hung my Pinterest craft today. 
 
Friday, Amy and I decided to ditch running and yoga, respectively, and do a craft so we found this neat map string craft on Pinterest, gathered our supplies and away we went! She did Ohio and Delaware (college and home state) and I did NH.

 There was supposed to be a heart (as you can kind of tell from the first picture) but the heart looked stupid when I started stringing it so I decided just to do a large dot. I'm pleased! And it looks snazzy above my couch. That wall really needs some decor but I haven't found anything that I love. The NH craft seemed perfect and it's the first decoration there-yay! I'm thinking of framing some dried leaves and putting those on there too. Who knows. 
Oh and, I'm knitting again. HAPPINESS!!!
Amy knits too but it's been a while for us both so Friday when I was at Wal-Mart getting spray paint and string, I took a detour down the yarn aisle and tossed in a few balls of yarn and some needles and while we waited for our boards to dry, we started knitting. 

What a great weekend!

It's 10:08pm. Do you know where your kid is?

Don't worry Madre. Scotty is sleeping comfortable on my bed. Oh and I'm fine too >:) You will find me in the kitchen, baking away! 

The kitchen is my favorite place to be. At home this is where we tend to congregate. I like it a lot. Also this is the place of eating. And creating yummy things. 

I will find any excuse to bake because it's relaxing and it gives me the opportunity to try out new recipes and share the goodness because left to my own devices and by myself with a pan of goodies...yikes. No dice. I overheard one of the nurses say she really wanted a red velvet cake for her birthday so I told her I'd make one. Then the nurse next to her said their birthdays were a day apart so I told them in May I'd make them each a cake. I can't wait! THEN the pharmacist, who I absolutely adore, said it was her birthday Saturday and I told her I'd make her something and bring it in tomorrow.

When I got home I I meticulously combed through recipes to find a good enough one for her. Well I found one. A classic recipe with a few twists: 

Brown butter chocolate chip cookies. With a pinch of sea salt on top. 
DONE.

I hope she likes 'em!

Now on to random tidbits.
1. I ordered a new cookbook that one of the dietitians told us about yesterday. It's written by a dietitian/chef and she alters recipes to make them a little healthier while still maintaining the integrity of the product and its taste. I'msoexcited! I can't wait to get it, crack it up and start cooking/baking. 

2. My friend and colleague Amy is a Godsend. Honestly. I needed a friend badly and she came into the scene and boy oh boy am I EVER so glad. She's HIIIIIIIIIIIIIIIILARIOUS. Put the two of us together and just follow the giggles and you are sure to find us. Yesterday we had a staff meeting after work. I opted to sit next to Amy, which may have been an unwise choice, because we pretty much reverted to 3rd graders. A story: Amy and Britney decided a few days ago that they were no longer going to eat sweets. I refused to join them. Not this week anyway. Well one of the other dietitians brought in pumpkin spice Hershey kisses and pumpkin yogurt covered pretzels. To tease and tempt Amy and Britney (who was sitting across table from us) I slowly unwrapped one of the pumpkin spice Hershey kisses, smelled it seductively, and the bit into it slowly. All the while our manager is reviewing the first bullet point of her agenda. Amy and I BUSTED up laughing. I almost choked on the Hershey kiss. Everyone looked at us and chuckled awkwardly while Amy and I were, at first laughing hysterically, and then trying to calm down, silently laughing with tears coming out of our eyes and I was still trying to swallow the kiss without spitting it up, choking, or aspirating chocolate. OH wow it was sight to behold I am sure. Amy and I pulled it together and we were trying not to laugh but every time Amy silently chuckled I would start to lose it, though I was able to keep quiet but JUST BARELY. I  was half expecting our manager to tell us to separate. It took me a good 3 minutes to finally swallow that Hershey kiss. Whew. It was so funny. 

3. This morning I stumbled outside to take Scotty for his morning jaunt and ran into my neighbor as we stepped out the door. Mind you, I had no makeup on, hadn't brushed my teeth yet, my hair was crazay and I probably still had an eye crusty in my eye. He told me he was taking one of our neighbors to the airport this morning and usually she trims/buzzes some of his hair in between haircuts but she is going out of town and so he asked me to be his "barber." I said sure. So this evening Scotty and I went over (Scotty is now besties with his chihuahua Poppy) and for the first time in my life used clippers. I told him I'd never done this before and if he ended up losing an ear, I had forewarned him. Apparently you can't cut people with those...Well, I didn't cut him and 1.3 minutes later I had clipped and told him I was changing my profession to a barber. Then I bowed ever so gracefully and Scotty and I went home. So gents, if you need to trim/buzz the back of your hair in between haircuts, I'm your gal. 

4. Today was my last run before the half marathon. I busted out another 3.2 miles with an average pace of 8:29. I felt really lethargic and crummy running, though I was shocked when I saw my pace. We'll see how Sunday goes. I'm starting to get nervous because this week I've felt so icky running. YIKES. I'm hoping the adrenaline and excitement help to alleviate my nerves. 

And now for the recipe, adopted from design. bake. run.

Ingredients:
115g (1 stick) unsalted butter 
75g (1/3 cup) granulated sugar 
90g (1/2 cup) light brown sugar 
1 medium egg 
1 tsp vanilla extract) 
175g (1 1/2 cups or 6 oz) whole wheat pastry flour (I used 1 cup regular whole wheat and ½ cup all-purpose flour but just using one kind of flour is fine too) 
1/2 tsp baking powder 
1/4 tsp baking soda 
1/2 tsp salt 
1 tsp cornstarch 
1/2 cup semi-sweet or 60% cocoa chocolate chips (I highly recommend Ghiradelli) 
sea salt for scattering on top (optional but encouraged)

Directions:

1.    Place the butter in a small saucepan over a low heat and cook until it starts to bubble and has turned a lovely golden brown color. Take off the heat and set aside to cool to room temperature.
2.    In a large bowl, whisk together the flour, baking powder, baking soda, salt and cornstarch.
3.    When butter has cooled (I got impatient and put it in the fridge for a few minutes), cream it together with the sugars until combined. Add the egg and vanilla and beat again. As this isn't a recipe for a cake, you don't need to keep on beating forever - you just want everything all nicely mixed together. You can do it by hand. I did and it was easy breezy.
4.    Fold in the dry ingredients, followed by the chocolate chips.
5.     Chill the mixture in the fridge for any time between 30 minutes and 24 hours. i don't have that much patience so my chilling time is normally closer to 30 minutes.
6.    Preheat the oven to 180°c/350°f and prepare a couple of baking sheets with either greaseproof paper or a silicone mat.
7.    Using a Tbsp measuring spoon, place spoonfuls of the dough on the baking sheet and, if desired, scatter a little sea salt on top. I did and recommend it.
8.    Bake for 8 - 10 minutes until the edges of the cookies just start to turn golden brown and are firm to the touch.
9.    Allow to cool on the baking tray for 10 minutes before transferring to a wire rack.

Salted Caramel Success

I tend to go through phases with baking and cooking. For a few weeks all I want to do is bake and cook and then for a few weeks I'd rather eat popcorn, cereal, and yogurt than think about cooking or baking. 

Right now I'm on a cooking/baking kick. I think it's the (upcoming but not fast enough for me) change in seasons. And fall is my absolute favorite so I'm pumped for just about everything fall as to offer. 

I've also been a Pinterest-ing fool lately. I have found some stellar recipes (craft ideas, style ideas, party ideas, among lots of other things) on Pinterest. I love it. I stumbled upon a recipe for salted caramel brownie pies (I'l post the recipe below too with some commentary!). They seemed easy enough and holy catscans, yummy enough too! And, ever since I was introduced to salted caramel gelato back when I lived in Tucson, I've been a sucker for salted caramel anything (especially when paired with gianduia gelato or chocolate. Mmmmm....!). So, I decided to make them for my monthly dietitian meeting on Wednesday and for my weekly staffing meeting on Thursday. 

Let me tell you, these are DEEEEEEEEEEEEEEEEEEEELICIOUS

The photo isn't my best but it was late and I was tired and I was a little annoyed with myself because buttercream frosting and I just haven't seen eye to eye yet. I had butter in the freezer so I took it out and let it thaw but it wasn't thawing fast enough so I put it in the microwave to soften it, got distracted, and 20 seconds later it was mostly melted. Dang it. But determined to make it work, I used the melted butter and just refrigerated it. It worked just fine but boy I was annoyed. One day buttercream frosting *shakes fist*, one day I will make you perfectly. 

Anyway, the dietitians loved them so I was happy. And naturally I taste tested them, and by them I mean the batter (several times), the frosting (several times), and one completed pie. I was pleased. Then I brought them in for staffing and for the love of sweets, I've never had the staff eat all of the treats I brought it. These puppies were gone in record time. Ever Dr. W, who refrains from partaking of my treats as he is currently losing weight, was tempted. It was highly amusing. The nurse sitting next to him was eating one and at one point I saw him out of the corner of my eye shift his weight away from her and so I looked over and he said, "I can smell the chocolate." Muahahahaahah!

So. In 2 weeks the hospital is having its annual bake off and my manager suggested I enter something because she knows I like to bake. I think I'll enter these. They are nice balance of rich, salty, sweet. Luxurious. Melt-in-your-mouth. Plus they are pretty easy to make. AND. GET THIS. We, as the dietitians, get to taste test everything. Well, darn (YES! YES! YES! YES! YES! YESSSSSSSS!) Naturally, I'm really excited.

I have today off and I ran 7 miles this morning at a (pleasantly surprising) 9 min/mile pace. This pleases me. I originally planned on 5 miles but once I started running, and I'm not much of a work-out-in-the-morning girl, I knew I could do 7.  Then, I was going to go to kick boxing at noon but after running 7 miles, no thanks. I am going to yoga later and I'm excited for that. Tomorrow I might do zumba. I still haven't gone. Busy week. Then I'm going to 3 hours of free yoga with some friends tomorrow. Hooray! 

Off to Pinterest to see what I can find! Here's the recipe adopted from Camille Styles:

Ingredients
Brownie Cookie

  • 12 oz. semi-sweet chocolate, chopped (Ghiradelli, always Ghiradelli)
  • 3 tablespoons butter
  • 2 eggs
  • 2/3 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour, sifted
  • 1/4 teaspoon baking powder, sifted
Salted Caramel Creme Filling
  • 1 cup butter
  • 2 cups confectioner sugar
  • 1/4 teaspoon salt
  • 1/4 cup caramel (didn't have caramel so I used caramel syrup, like the kind you drizzle on ice cream. It worked fine for me!)
Directions
For the brownie cookies:
  1. Place 7oz. of the chocolate and the butter in a saucepan over low heat and gently stir until melted and smooth. Set aside.
  2. Place the eggs, sugar and vanilla in the bowl of a stand mixer fitted with a paddle attachment and beat for 15 minutes or until pale and creamy. Add in flour, baking powder, melted chocolate mixture, remaining 5 oz. of chocolate and mix to combine. Set aside to to stand for 10 minutes.
  3. Spoon 2 tablespoonful (I did 1 TBSP to make smaller cookies and to yield more so I got about 28-30 cookies aka 14-16 pies) of the mixture, onto parchment lined baking sheet. Bake at 350 degrees for 8–10 minutes or until puffed and cracked. Allow to cool completely on trays.
For the caramel creme filling*:
  1. Place butter in a bowl and beat until creamed. Add in confectioner sugar and salt and beat until light colored and combined. Add in caramel and beat until combined.
  2. Spread a teaspoon and a half (I eye-balled) of caramel creme on underside of one brownie cookie (here I sprinkled a little kosher sea salt and added a drop of caramel syrup for fun) and place a second brownie cookie bottom side down on top frosting.
*The filling refrigerates very well. I actually make the cookies and the filling at night, put the cookies in the freezer and the filling in the fridge and assembled in the morning. This worked very well.
